What's for Dinner?

Christine turned me on to this dish. I like to call it MexiMac.

Here's what I did:

Browned 1 lb. of ground turkey and seasoned it with salt, pepper, cumin, garlic powder, coriander, chili powder, oregano, and cayenne. I could have used taco seasoning, but there is a ton of sodium in that stuff, and since I had the spices already on hand that are the same as in the prepackaged stuff, I used that.

Meanwhile, boil corkscrew pasta until tender. When the meat is browned, add one can of Spicy Ro-Tel and a can of regular diced tomatoes, and a small can of tomato paste. Work the paste into the dish to thicken the sauce.

Drain the pasta, add to the meat, and stir until the pasta is coated. I dished mine up and topped it with cheddar cheese, a dollop of light sour cream, and pico de gallo. I only allowed myself one bowl, but man, I could have eaten the entire skilletful, it was that good.
