More Lovely Food Photography
At work, I've become like this dessert diva. Whenever anyone has a birthday, I offer to make them their favorite dessert. A couple of months ago it was Italian Cream Cupcakes. Tomorrow, I will be getting up at the crack of dawn (well, more like 5:30) to make a peach cobbler for one of my colleagues. I will try to take photos, but more than likely I will forget. It's gonna be 5:30, people. In the morning.

Tonight I was at Kroger buying the stuff for said peach cobbler, and when I got home learned from DH that he was going to go play poker with his buddies tonight. Luckily, he had already prepared two chicken tenders in the broiler for my dinner (really, broiling from frozen is the ONLY way to go--they're so juicy!) so I threw together one of my staple meals, flatbread chicken nachos. It's super easy and tastes oh-so-good. Not the lowest Points meal, though, hanging in around 11, but I usually like to save my big meal for the end of the day anyway, so I have no problems with this. Here's the recipe if you're interested:

Flatbread Chicken Nachos

Points: 11

2 skinless chicken breast tenderloins, cooked and seasoned however you like
1 piece flatbread, toasted
1 Tbs. roasted red pepper hummus
1 Tbs. canned black beans, drained and rinsed
1 oz. low fat shredded Mexican cneese
1/2 of a small avocado (if you don't like avocado, you can omit it and add an extra tablespoon each of the hummus and beans--I wanted to try something different tonight)
Diced red onion, tomato, and salsa for garnish

Toast the flatbread under the broiler until crispy, and spread with the hummus. Top with black beans, sliced chicken, and cheese, and put back in the oven at around 350 degrees until the cheese melts and all the ingredients warm through, about 5-7 minutes. Remove from oven and garnish with avocado, onion, and salsa, and canned jalapenos if you wish.

Really, the possibilities are endless for toppings on this bad boy. Play around and find a combination you like! Yummy!

Since I started Weight Watchers, I noticed that I don't eat as much on the weekends as I do during the week. Usually, during the week, I use up all or the majority of my Points, but on the weekends I almost always have at least 10 to burn by the end of the day, and that's after I've eaten all my meals and such. Maybe I'm not as bored at home as I am at work, and I don't think about food as much? Who knows...one reason is that I usually wake up later on the weekends as well, and usually don't eat my first meal until around 11.

About a month ago, DH and I got new laptops. I am now the proud owner of one of the new Dell Inspiron laptops that you can order in different colors--mine is chocolate brown, and oh-so-chic. It totally matches the decor of our house! I also got the matching Belkin Cushtop lapdesk, also in chocolate brown--hey, I have to be color coordinated! So, where I used to use the kitchen table exclusively for my surfing, I now can surf from the comfort of the couch and not have my legs get all hot. I'm so spoiled...

This new laptop has a webcam built in (that I've used exactly once, and have no idea how to use properly,) and an SD Card reader, which makes uploading photos from my digital camera to my computer so much easier. So easy, in fact, that I was able to cook a delicious egg dish and it took me less than a minute to upload it to my laptop so I can share it with you guys!

I was going to make eggs on the stove, but at the last minute decided to pour the lot into my Corningware mini oval dish and bake it in the oven. Here's what I came up with:

Spinach and Cheese Baked Eggs
(only 5 Points!)

3/4 cup of Egg Beaters
1/4 cup Reduced Fat Cheddar Cheese
1 cup Frozen Spinach, thawed and drained
1/4 tsp. Ground Nutmeg
Salt and pepper to taste
Spray of Olive Oil Cooking Spray

Spray the dish with the cooking spray, and layer the spinach on the bottom. Sprinkle nutmeg on top of the spinach, season with salt and pepper, and top with half of the cheese. Then, pour the egg beaters on top of the spinach and cheese mixture, use more salt and pepper if desired, and top with the remaining cheese.

Bake in a 350 degree oven for 20-25 minutes, checking after the first 15 minutes or so.

Doesn't it look yummy? It sure tasted yummy....

Of course, being a girl who can't get enough spicy food, I liberally splashed Tabasco on top. No egg dish is complete without Tabasco!!

I have two posts in draft form that I just can't finish. What's funny is that they happened at two completely different times in my life. One is about something that's going on in my life at the moment (doesn't have to do with DH or anything like that--we're great,) and the second one happened during a time period of about 5-10 years ago that is the main reason I went off the deep end. Both are difficult to write, not only because they're pretty personal, but because I can't find the right words to say what I want to say. Plus, on one of them, I feel that some of you may be shocked at what you read. Or you might laugh. Who knows?

Have any of you experienced writers block? What do you do to get over it? On another note, do any of you have any requests on what I should post about??

On the Weight Watchers front: I've lost 9.6 lbs in the past month. I go in for my weekly weigh-in tomorrow morning. Wish me luck!!!

UPDATE: Well, this week wasn't so kind to me--I lost only .2 lbs! I guess part of it was DH's and my Sunday night Sonic throwdown, where I had an extra-long chili cheese coney and tots. However, it was within my Points range! Well, that, and I had fajitas on Monday with my boss and a coworker. Oh well. Take the good with the not-so-good!

Not a Good Way to Start the Morning
At 2:30 this morning, I was apparently having a nightmare, because I was POSITIVE that a pale man with red hair was lunging at me while I was in bed. I screamed and backed up against DH, and once I woke up realized it was a dream.

After calming my quickly beating heart, I later awoke to a loud crash and pain in my head. Apparently, one of DH's cats finally succeeded in knocking over one of our new, heavy lamps, and in his haste to get away he jumped over DH onto my head.

So, at 5:30 (an hour earlier than I usually get up,) I decided to give up trying to sleep. Plus I needed to tend to the deep-ish claw marks that are gracing my scalp now.

Sigh. As I said in the title, not a good way to start the morning.......

A Horoscope...
This horoscope is not mine, but I am posting it for someone in order to give encouragement....you know who you are!!!

Our world contains a million unwritten codes of behaviour that we transgress at our peril. We are judged by our peers and found wanting if we fail to follow their protocols. Take, for example, the thorny issue of identity. Why are we all allowed only one each? Why can't we have several to pick and choose between according to our mood? You now don't feel what you used to feel, nor want what you used to want. In some circles, this is called inconsistency. A much better word would be progress.

It's Sunday Afternoon.* Do You Know Where Your Kitties Are?

**Obviously, this is being posted Monday night instead of Sunday afternoon, but while we were getting ready to leave to go see The Bourne Ultimatum last night (GREAT movie, btw,) I saw BlackJack with his butt sticking out from under the couch in the video game room and it made me go on a quest to find the other three. All were sleeping peacefully in different rooms of the house, except Kino, who looked a bit perturbed that I was taking his picture.
